Madame Crunch goes keto. The result? Ham+Cheese+Egg=TASTY. We've just swapped out the bread with cottage cheese and egg pancakes, and the result is an even tastier keto classic. All of the flavor, none of the carbs.

Ingredients
- 1 cup (7½ oz.) 240 ml (210 g) cottage cheese
- 4 4 eggeggs
- 1 tbsp 1 tbsp ground psyllium husk powder
- 1 tbsp 1 tbsp butter
- 4 oz. 110 g smoked deli ham
- 1½ oz. (6 tbsp) 45 g (95 ml) sliced cheddar cheese or other cheese of your liking
- ½ (2 oz.) ½ (55 g) finely chopped red onionfinely chopped red onions and fresh chives (optional)
Serving
- 2 2 eggeggs
- salt and pepper

Making low carb simple
Instructions
Whisk the eggs in a bowl. Mix in the cottage cheese. Add ground psyllium husk powder while stirring to incorporate it smoothly, without lumps. Let the mixture rest for five minutes until the batter has thickened.
Place a frying pan over medium heat. Add the butter and fry the batter like small pancakes for a couple of minutes on each side until they are golden. Make two pancakes per serving.
Assemble a sandwich with sliced ham and cheese between two warm pancakes. Add finely chopped onion on top.
Fry an egg in the same pan as your linking.
Serve the Croque Madame warm with the fried eggs on top.
Tip
Remove the crowning fried egg and you'll have a Keto Croque Monsieur instead. Still keto. Still delicious.

I just want to correspond with someone. I'm no sure how to figure the 70% fat, 25% protein, and 5% carbs. Do you count the grams on the nutritional chart? I just want meal plans without paying so much.

Ok, taste similar to omelette.
Gently mix egg with cottages cheese. Add 2 table spoons of p.husk to achieve good consistent mix. Add salt and pepper , otherwise it’s very bland. Enjoy.3

Calculate your macros in grams not in %, as otherwise it’s confusing.
Focus on carbs intake , I would suggest to read about it first, and understand where are hidden carbs and which product contain minimum carbs, as this helps a lot. Yes, you would focus on the grams in total as this is the easiest way. There are plenty of recipes online. I suggest to pick those ones which are familiar to you and those ones which contain products which you already eat , as it makes it easy to adjust the recipie and you hardly notice a change. Let me know if you need more help , I have plenty of advise as I have been doing it for 6 months and the diet works but could be tricky.4

You can try ricotta cheese but we have not tested this recipe with that sub.

So i managed to get cottage cheese and ricotta cheese and guess what?!?
The batter for ricotta was much better than the cottage cheese.

I liked it. Recipe for two made a lot of pancakes so i froze the leftovers. I sprinkled the onion on top of the eggs while they were frying. Very filling. God bless Keto. I’ve gone from 180lb to 144lb since 7/1/18.

we should have a handy hints category. I cook up a pkg of bacon, save the grease, chop up the bacon then freeze for recipes that require a little. Also, as much as possible, I cook with bacon grease (it’s free!) and save the butter for when I really need it.

I am thrilled to have found this recipe. The bread was wonderful. I also made 8 bread rounds out of this and kept the rest for other meals. And I only did one round each for our breakfast with some ham and an egg so the carb was lower. I also made a small amount of a low carb cheese sauce to top it off with. Total was 7 gram of carbs. We will be making this again.❤

The pancakes won't hold together with this amount of psyllium husk. Perhaps you're recommending DRY cottage cheese? I used the common kind here (1% MF). Even fully drained, at different temps and times -- it's soup, not pancakes and certainly not "crispy." Any ideas?

Great recipe with plenty of flexibility to use what you have on hand. I’ve tried several variations and substitutes: instead of husks I’ve added 1tbsp of chia seeds and 1 tbsp almond meal/flour (increases carb just a bit). Adding a little grated Parmesan, salt, pepper and turmeric provided flavor.
When making the cake on a griddle, I covered it with a lid after the first minute or so to help the egg set. After that flipping it was a breeze. Thank you for this great recipe!Reply: #16

After reading the comment, I made with ricotta, 1/4 tsp salt, and 1 tbs grated parmesan. I use a cast STEEL (not iron) pan for cooking. best non stick pan ever, if seasoned correctly. Took a minute to find the right heat setting. I used silicone egg rings in the pan to keep the round shape. The batter got thicker the longer it set. Initially, I filled the rings too full. Thinner, less batter, works best. I got 8 rounds out of the 1 receipt. I ate with oven-baked bacon and a hard boiled egg. so far, so good!
